Tanks are where wine is fermented, settled, held, and aged — the stainless-steel core of the cellar. In a visitable cellar they are the first thing a visitor sees, so they are engineered for the work first, and shaped to be worth looking at.
Catwalks and platforms are the elevated stainless access structures that let the team work above and between the tanks — and let visitors move through the cellar. They turn tank rows into a route.
Fittings and components are the valves, doors, cleaning systems, and connections that complete a tank and keep the cellar hygienic and serviceable.
Square tanks change how the cellar meets its own floor. Where round tanks leave permanent gaps between them, the square format aligns with walls, rows, and walkways — reclaiming up to 20% of the floor and giving the winemaking room a look worth opening to visitors. This is the heart of the Square Tank Series.
Red wine fermentation asks for access and control: the winemaker needs to reach the cap, manage temperature through an active window, and keep the work close to the wine. These Olavin tanks are the formats built for that — open-top and closed, square and conical, small-lot to production scale.
Storage and aging is where wine spends most of its life in the cellar — months of settling, blending, and holding before bottling. These tanks are specified for the long hold: clean surfaces, thermal stability, and cellar order, so quality can stay in the tank as long as the wine plan asks.
