Why this tank

The tank rows shape everything.

A Diamond Square Fermenter is not chosen for its facets. It is chosen when the tank rows have started deciding the cellar — walkways, platforms, cleaning routes and productive capacity all set by where the tanks stand — and the curved gaps between round tanks have stopped paying their way.

For the wine, nothing is given up to get the geometry: closed fermentation, jacketed control, and an interior curved and radiused so a square tank stays as washable as a round one. For the cellar, it means square profiles align with walls and neighbouring tanks, and floor area turns back into capacity.

The decision is also seen. A cellar people walk through is judged on its rows, and a faceted top that catches the light turns necessary equipment into something worth putting on the route rather than routing visitors around.
