Why this tank
An Enclosed Fermenter is not chosen simply because the tank is enclosed. It is chosen when the wine needs a more manageable fermentation environment, and the cellar needs the freedom to decide how that tank works from one batch to the next.
For red wine, that means beginning with the variety, the intended style, and the level of protection the wine needs. For the wider cellar, it means a jacketed format that can move into white fermentation, storage, or aging as the vintage unfolds.
The same decision continues after fermentation. Clear-wine recovery, draining, and cleaning shape the end of each batch just as much as temperature and access shape the beginning. The right tank plan keeps these decisions connected without forcing every wine into the same path.
