Why this tank
A Diamond Square OT Fermenter is not chosen because the tank is square. It is chosen when the work has to stay open to the wine — cap visible, surface within reach, judgement made while the ferment is running — and the cellar can no longer afford the floor that open-top work usually costs.
For the wine, that means access is never the thing traded away: the cap stays visible, cleaning stays direct, and the decisions that only happen at the tank keep happening at the tank. For the cellar, it means the same tanks leave more of the floor to the walkways, platforms, hoses and sightlines that are competing for it.
The decision does not end at the ferment. How easily the team cleans a square interior, and whether an open-top tank stays useful for the rest of the year, are settled in the same conversation as its shape.
