A jacketed round tank for white fermentation, storage and aging, from 1.0 kL to 50 kL — planned around how long the wine has to sit, and what it sits against while it does.
Why this tank
A Round Tank is not chosen because it is round. It is chosen when wine of real value has to stay somewhere for months — cold stabilization, blending, aging — and the only thing standing between that wine and the room is the surface it sits against.
For the wine, that means the surface has nowhere for tartrates or microbes to survive a wash: every internal weld is ground and polished to a mirror-grade finish, because standard welds hide microscopic crevices and a long hold gives them all the time they need. For the cellar, it means sanitation stops being a battle against the tank’s own construction.
The decision scales further than one tank. The same construction logic runs from 1.0 kL trial lots to 50 kL production capacity, so a storage strategy can grow for years on one format, one set of connections, and one cleaning routine.
