Why this tank
A Variable Capacity Tank is not chosen because the lid moves. It is chosen when the volume in the cellar refuses to hold still — many small lots by design, wines like Pinot Noir that reward keeping every parcel distinct, or a harvest that has quietly ignored last year’s plan — and the wine still has to sit protected at whatever level it lands.
For the wine, that means the boundary above it is real rather than nominal: sealed by Everseal™, the hold stays protected whether the tank is full or half full. For the cellar, it means the part that used to need weekly checking is the part that no longer does — because a conventional seal turns flexible capacity into a standing worry, and one missed check is one exposed wine.
The decision reaches past vintage. A tank that works properly at any level can ferment in season and then hold, settle and age at whatever volume the program leaves behind — which is where flexible capacity actually pays for itself.
