Equipment planning should begin with cellar behavior, not with a catalogue. The tanks you choose, where they sit, how they are accessed, and how product moves between them will quietly determine how the winery operates for the next fifteen vintages. A tank is easy to specify in isolation. A cellar is not.

Start with the decision, not the tank

Most equipment conversations start too late. By the time a winery is comparing tank quotes, the harder decisions have usually already been made implicitly: how many lots will be kept separate, how fermentation peaks will be absorbed, how wine will be moved without excessive handling.

Those decisions belong to winemaking, and they should lead. Equipment is the physical expression of a production intent — the point where an idea about how wine should be made becomes steel, space, and routing.

A cellar is a system before it is a set of objects. The objects only work if the system underneath them is coherent.

When the underlying intent is clear, specification becomes straightforward. When it is not, no amount of premium equipment will compensate for a workflow that fights itself.

Three lenses for every choice

For any significant equipment decision, it helps to look through three lenses at once.

  • Workflow — How does this tank participate in the daily and seasonal rhythm of the cellar? What happens immediately before and after it in the process?
  • Space — How does it sit within the building? Consider access, headroom, drainage, thermal zones, and the routes people and product take around it.
  • Investment — What does this choice commit the winery to over its working life? Flexibility, capacity headroom, and maintainability are part of the price, not separate from it.

A choice that looks efficient through one lens can be expensive through another. The goal is not to optimise a single tank but to keep the whole system in balance.

Plan for peaks, operate in the average

Fermentation is not evenly distributed. The cellar that feels generous in February can be under acute pressure for three weeks in autumn, when everything happens at once. Capacity planned only for the average will fail at the peak; capacity planned entirely for the peak will sit idle most of the year.

The resolution is usually flexibility rather than raw volume — tanks and configurations that can absorb variable harvest volumes without locking the cellar into fixed capacity it cannot use later.
